In Microsoft Word, you can revisit earlier versions of the same document, to see what changes were made at different times in the document's history.
Desktop Word for Windows

To use this feature in Word, you must save your document to OneDrive. To do this, log into your University at Buffalo Microsoft 365 account within Word (or another Office application.) In Word, you can do this by clicking the account icon in the upper right corner, or under Accounts within the File Menu:

Then, Word should give you an option to save to your University at Buffalo OneDrive.

Once a file is saved to OneDrive it will automatically auto-save any changes, within several seconds. This is handy because your work is backed up to a cloud location. Also, you can now access version history by clicking the file's name in the uppermost toolbar:

Word for Mac
On a Mac, the process is the same: log into your UB Microsoft 365 account within Word.

Then, when you have a file saved to Onedrive, you will find the Version History option in the file name's dropdown menu at the top center of the toolbar.

Word Online
Like Google Docs, Microsoft offers a version of Word that operates in a web browser. This is handy if you are working on a PC without Office applications installed. Access Microsoft Office Online by going to office.live.com. Enter your @buffalo.edu email address, and you should be transferred to a UBIT login page. Login using your UBIT credentials (which may also require Duo for multi-factor authentication)
Your next screen may be CoPilot, but you can get Word Online by clicking the applications Icon and on the menu, clicking Word

After you create a document in Word Online it will automatically save to OneDrive. Version History can be found in the File menu:
